These family-friendly vegan freezer meals are perfect for making ahead of time for those busy moments! Find ideas for breakfast, dinner, and more. The following quick and easy tomato soup is perfect for freezing!

Ingredients

Easy Tomato Soup

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 28-oz cans chopped tomatoes
  • 2 cups water
  • 2 tablespoons Italian seasoning
  • 2 teaspoons sweet paprika
  • 5 tablespoons vegan cream (coconut, soy, or almond)
  • Salt and pepper to taste

Instructions

  1. Heat a soup pot over medium-high heat. Add olive oil and onion. Sauté for 3 minutes, stirring occasionally. Add garlic and sauté for 2 more minutes.
  2. Add the remaining ingredients and stir to combine. Turn the heat down to high and bring to a boil, then let the soup simmer for 10 minutes.
  3. Use an immersion blender to create a smooth tomato soup if wanted or leave it chunky!
  4. Enjoy with fresh basil and some bread or crackers.

Notes

  • Use smoked or hot paprika instead of sweet paprika if wanted!
