adding cream is completely unnecessary if you follow a couple of guidelines. First use quality pasta. Go to eataly.com or amazon and buy Afeltra brand or some other organic imported pasta. Add some grated Parmesan to a small amount of the pasta water taken near the end of cooking to make a paste; it’ll thicken it without adding cream. Scoop the pasta out of the water and put directly into the pot with water clinging to it and then add your parm infused water and any extra if needed.

Delicious! I added a can of chickpeas (bc i didn't have enough cauliflower) and served it over a bit of kale (bc I had it in the fridge). Nothing needs to be added to this recipe - the bacon and sage flavors combine beautifully with the lemon. We don't even love cauliflower, but it was perfect in this dish. This recipe is a keeper (two teen boys devoured it).

Delicious! I followed the recipe exactly but used only 1/4 lb of bacon and 1/2 lb of pasta because I like the roasted cauliflower to dominate. Next time I might saute some onions in the bacon fat before adding the pasta for a bit of sweetness and even more vegetables.

My wife and I both thought this was delicious, but she suggested an addition of toasted pine nuts, probably as a garnish, and I completely agree.

Worthy of 5 stars. Made this with 250 gm of penne, 2 small cauliflower and no sage (pandemic omission). I removed the bacon from the pan after cooking & most of the fat and then sauteed the cauliflower, resulting in lots of caramelization. Then added the pasta to the pan, some pasta water and 1/2 cup of white wine. Similar to others, I used a lot of grated pecorino and parmesan. These tweaks avoided turning on the oven and used 2 pans.

I used less pasta than is called for here and still wished there were less (ie a higher veg/bacon to pasta ratio). only had around 1/4 sage and it was overpowered by lemon, so def go for the full amount!1 shallot sautéed in the bacon fat and dry-toasted pine nuts were a nice addition

I did the recipe almost exactly has written but I added a little less water and a little more parmesan. I was worried it wasn't creamy enough but the fact that it wasn't was all the most delicious. It wasn't too heavy.

I found this a little bland for my taste as is, so added a bit of sundried tomatoes, chili crisp, and fennel seeds to the bacon mixture to add a bit of brightness. Delicious!

I have made this a number of times. I always add kale or chard to the dish and often skip the sage. Kids and adults all like it!

Absolutely delicious. Cooked cauliflower in bacon grease leftover from breakfast, so sadly no bacon left for this dish but flavor was in there. Fried sage is perfect, sauce is simple and delicious. Fusilli was a winner. Thank you for such a great recipe !

I made this with broccoli (didn't have cauliflower), and added a chanterelle that we found on our hike. It was very good! I was a little irritated with how much cheese stuck to the skillet, though. Wondering if there's any advice on how to prevent that?

Very good and will make again. Like others suggested, I think this dish would benefit from less pasta or more bacon and cauliflower. I think pine nuts or a splash of white wine during cooking would also elevate this dish.

This was really good. I omitted all of the salt and added some red pepper flakes. Seemed like it was going to be boring but it wasn’t. Not the fastest recipe around but worth it

Fantastic. Made it exactly as written except that I really like caramelized cauliflower, so I left it in for about 40 minutes, tossing every 15 minutes or so. The dish is creamy and filling. Next time, the only other changes I'd make are to cut back a bit on lemon juice and maybe add some red pepper flakes at some stage, but the dish would easily lend itself to other yummy tweaks.

This was delicious! I did have some trouble with clumping cheese, but it didn't deter from the wonderful flavor. Like many others, I sautéed some shallots in the bacon fat and drained off more fat than the recipe called for.

This is wonderful! I didn't have cauliflower, so I threw in some artichoke hearts. Lots of sage running amuk in my garden, so I loved that I could use some of that bounty in this dish.

Made with macaroni pasta since that's all I had and it was good. I think that shape stood up to the cauliflower well. Would add garbanzo beans next time too. Really good recipe, great comfort food that will go on repeat.
