One of my favorite memories growing up was making cut-out sugar cookies with my mother every Christmas. My mother slowly refined her recipe over the years into something that is nothing short of delicious.

This year, however, I’m grain-free and of all the things I was going to miss this Christmas, those cut-out sugar cookies were at the top of the list. I decided it was unacceptable to let a Christmas go by without my mother’s cookies, so I adapted this recipe to be grain-free. With two simple flours, coconut flour and tapioca flour, this cookie is sure to please.

If you love cut-out cookies at Christmas time, make sure you check out this Gingerbread Cut-Out Cookies recipe, too.

Ingredients

  • 1 cup ghee or butter
  • 1 cup granulated sweetener cane sugar/coconut sugar/ etc.
  • 4 eggs
  • 1 tablespoon vanilla
  • 1 1/4 cup coconut flour
  • 1 cup tapioca flour
  • 2 teaspoons baking powder make your own without cornstarch - 1 part baking soda, 1 part arrowroot or tapioca, 2 parts cream of tartar
  • 1 1/2 teaspoons unrefined sea salt

Instructions

  • Cream together the ghee (or butter), granulated sweetener, eggs, and vanilla.

  • In another bowl mix together coconut flour, tapioca flour, baking powder and salt. Blend the flour mixture into the first bowl.

  • Cover and chill for an hour.

  • Heat oven to 400 degrees Fahrenheit.

  • Place dough on a piece of parchment paper. Sprinkle the top with some tapioca flour and roll out until it's 1/8-1/4 inch thick. Using a cookie cutter, cut out the shapes.

  • With a hard spatula, scoop the shapes and place them on a baking sheet. Bake 6 to 8 minutes.

Notes

• If you are like me, you are probably wondering if you can substitute honey for the granulated sweetener. I tried many times to make this recipe with honey, but every time it turned out gummy. My theory is the honey reacts with the tapioca flour to create a gummy texture. So take my word for it and use a granulated sweetener.

• If the dough gets soft and becomes difficult to put on the baking sheet, stick the parchment paper with the cutouts on it in the freezer for 10 minutes. After that the cut-outs will pop right out and maintain their shape easily.

We try to be as dairy free as possible. I was wondering what your thoughts are substituting coconut oil or palm shortening for ghee/butter.

These are excellent! The directions are so clear & helpful. My favorite gluten free Christmas cookies this year (I’ve made 3 other batches). They were moist for a coconut flour based recipe and are somehow more moist on day 2 (a good thing). I frosted them with 1 part maple syrup to 2 parts coconut oil, whipped. Well done Sarah, thank you!

These turned out great! I ended up making a whole batch for Christmas. They have a little coconut flavor at first but after that they have a wonderful full flavor. I didn’t frost them but decorated then with sprinkles. Thank you Sarah!

FAQs

What is the secret to cut-out cookies? ›

Pull off the top sheet of parchment, then slide the sheet of dough onto a baking sheet, then pop it in the freezer. (You can stack as many sheets of dough onto one baking sheet as you'd like.) Sandwich your dough between two sheets of parchment, roll, then freeze; it makes cut-out cookies a breeze!

What does baking powder do in cutout cookies? ›

To illustrate, I baked our normal vanilla cutout cookie recipe which includes 2 tsp of baking powder and a batch with no baking powder. The cookie with baking powder was puffier and lighter in texture whereas the cookie without baking powder was very dense, compact and almost concave.

How to prevent gluten-free cookies from spreading? ›

Chill the Dough

Put your cookie dough, already rolled dough or even an entire cookie sheet with cut cookies on it in the fridge when it's too soft. This helps cut cookies hold their shape and overall decreases spreading during baking.

Why won't my cut-out cookies hold their shape? ›

To help cookies keep their shape, freeze them! I freeze each batch of cut-out cookies for 5 to 10 minutes before baking. They rise just slightly higher and keep their shape better. This really helps when using an intricate cookie cutter, but I do this even when baking circles.

Can you use premade sugar cookie dough for cutouts? ›

Simple metal cookie cutters can transform store-bought slice-and-bake dough into the most festive holiday dessert. For these Christmas cut-outs, all you need is a 16.5-ounce roll of Pillsbury sugar-cookie dough, some flour, and an oven (elbow grease not included).

Why poke holes in sugar cookies? ›

So by poking the holes in, the cookie. will ensure that the cookie shape does not spread, which sugar cookies love to do.

Why did my sugar cookies spread so much? ›

Mixing Butter & Sugar

If your butter is under mixed, it won't have the air pockets to hold it's shape. If it's over-mixed, the air pockets decrease in size and are unable to hold their shape in the oven—causing your cookies to spread. It's best to cream butter and sugar on medium speed for 2 to 3 minutes.

Why are my cutout cookies puffy? ›

Q: Why are my cookies so puffy and cakey? Whipping too much air into the dough. That fluffy texture you want in a cake results from beating a lot of air into the room temperature butter and sugar, and it does the same for cookies. So don't overdo it when you're creaming together the butter and sugar.

What happens if you use baking soda instead of baking powder in sugar cookies? ›

Baking Soda Substitute

Baking soda is generally about three times stronger than baking powder, so adjust your recipe accordingly. Baking soda and baking powder can produce cookies with different textures. Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies.

What happens if you don't put baking soda in cookies? ›

You technically can leave out baking soda in certain recipes (like chocolate chip cookies or pancakes) in a pinch, but you need to understand that your finished product will not be as light and fluffy as the recipe intended. Unless you have no other option, you really should use a leavening substitute.

What does no baking powder do to cookies? ›

Even without baking powder, a well-aerated dough will still puff with steam. If that supply cuts off before the cookies set, a soft dough will collapse in on itself. If it continues until the end, the air pockets are preserved as the cookie's crumb.

Should I add xanthan gum to gluten-free cookies? ›

Using xanthan gum helps provide some of the stickiness that gluten free goods lack, replacing some elasticity. Xanthan gum mimics some of gluten's most essential properties by sticking to flour and its moisture. This helps create moist goods that hold their shape after being baked.

Should you chill gluten-free cookie dough before baking? ›

5- Chill your dough well before baking.

It reduces stickiness of gluten free doughs and also can enhance the flavor, but again, it's not necessary with gfJules Flour or Cookie Mixes. If you find your cookies are too crispy for your liking, do not chill the dough before baking.

Why are gluten-free cookies so hard? ›

Another reason is that gluten-free flours, such as almond flour or coconut flour, can behave differently than wheat flour in baking. They may absorb more liquid, for example, which can result in dry or crumbly cookies.

What is the trick for cookie cutters? ›

I keep a little salad plate of flour right by my rolling area and dip my cookie cutter in it between cuts. This keeps the cutter from sticking to the dough and stretching or tearing the shape.

What is the best way to roll out cut-out cookies? ›

Rather than roll dough on a floured surface, roll it between sheets of non-stick parchment or waxed paper. Adding extra flour to the dough while rolling can make cookies tough. And cutout cookies release easily from paper when you move them to the baking sheet, preserving their shape.

How to cut perfect cookies? ›

As you cut your dough log into individual cookies, give it a quarter-turn every three or four slices to ensure that the knife doesn't flatten one side repeatedly against the cutting board. And voilà, perfectly round Maple Pecan Shortbread, World Peace Cookies, and Pistachio-Crusted Icebox Cookies.
