When I set out to find a recipe to save the sad-looking bananas on my kitchen table, I spotted Elise’s post about Mrs. Hockmeyer’s banana bread recipe. And I knew it was what I was looking for.

For one, it was tested and approved by many. That’s the beauty of the food blogosphere.

Secondly, the ingredient list didn’t include brown sugar. The combination of brown sugar and ripe bananas is too rich for my taste. It somehow tastes sweeter than a banana cake made with white sugar. And there are many advantages to a not-too-sweet cake. The biggest one is, you can spread Nutella on top!

Think of this recipe as the cake version of this banana and chocolate toast. Hope you’ll like it, too.

MRS. HOCKMEYER’S BANANA BREAD RECIPE

Adapted from Simply Recipes.

Ingredients

  • 1/2 cup (1 stick/115 g) butter, melted and cooled
  • 3 large (17.5 ounce/500 g) ripe bananas
  • 1 cup (200 g) sugar
  • 1/2 cup (50 g) desiccated coconut
  • 2 large eggs
  • 2 teaspoons (10 g) vanilla extract
  • 1+3/4 cups (235 g) flour
  • 1,5 teaspoons (6 g) baking powder
  • 1/2 teaspoon (3 g) baking soda
  • 1/4 teaspoon (2 g) fine sea salt

Method

  1. Preheat your oven to 350 F/180 C.
  2. Butter and flour an 8-inch loaf pan and set aside.
  3. Place the peeled bananas, sugar, desiccated coconut and eggs in a mixing bowl and puree with the help of a immersion blender. Add the melted butter and puree until well blended.
  4. Sift the flour, baking powder, baking soda and salt on top and mix with a spatula until combined.
  5. Pour into the loaf pan, smooth the top with a spatula and bake for 60 minutes or until a toothpick inserted in the middle comes out clean.
  6. Cool on a rack, remove from the pan and serve with Nutella!

    Very interesting! I’ve been making Mrs. Hockmeyer’s banana bread for a year and a half now. I’m eating a piece as I write this post. Ymmmmm.

    BUT … I was amused to read the reasons why you like it. Evidently you and I have totally different taste buds. I don’t like hazelnuts, and so spreading Nutella on banana bread would not be my cup of tea.

    I *am* crazy about pecans, though.

    So I always make Mrs. Hockmeyer’s Banana Bread using 3/4 cup brown sugar, and crushed pecans! (On the occasions I serve it as a cake, I just bake it in a shallow pyrex dish — for more surface area — and top it with a butter-vanilla frosting.)

    In my opinion, 3 bananas work best, by the way; 4 makes it imbalanced.

    Oh, just as I was finishing this post, my husband just shouted down the hall: “That’s good banana bread, honey!”

    i baked banana bread/cake last night, trying out 2 new recipes. this one and another one that calls for molasses. This one is simpler yet a lot tastier.

    I finished past midnight so I’m having my first slice now for breakfast (in the office). Yummy, yummy, Thanks!

    Pity I didn’t get to read about the nutella until now, i just came back from the middle east where they are a lot cheaper, and brought home 2 jars!!! I’ll surely have banana bread and nutella for dessert tonight, that is if there is still any banana bread left when i get home 🙂

    Funny, I made this recipe when I saw it on Smitten Kitchen and while we were eating it I said to my husband “this would be really good with nutella” – unfortunately we didn’t have any on hand and it was late at night. Although we drove around (that’s how much I was craving it) we couldn’t find anywhere that was open and stocked nutella!

    Though I am sure this recipe is a lovely rendition, it is NOT Mrs. Hockmeyer’s recipe. Her recipe, which I have been baking exclusively since I discovered it many years ago, is simple perfection. Of the 9 ingredients in the original recipe, you have changed 6 of them and added 2 additional ones. As such, it is misleading to include her name in your recipe title. While you do credit it as being adapted from Simply Recipes, it would be better retitled as (Cenk,’s/Jenk’s/Fernando’s) Banana Bread, as adapted from Simply Recipes Banana Bread of Mrs. Hockmeyer.
