I’m not a habitual ‘crazy couponer’, as my husband lovingly calls me during my binges. From time to time though? This Mama likes to save money as much as the next person.

Bonus points when it’s on something I have to buy anyway, like food to feed my hungry, hungry hippos (aka boys).

I also have developed this inherent sense for knowing when things will be on sale.

It may seem like common sense to some, but it took me years to hone my skill of knowing when seasonal items (and particularly what items) would be going on sale.

I know now that in the weeks leading up to Thanksgiving, usually about two weeks before things like cranberry sauce and stuffing get marked down- drastically. Best sales of the year!

When we first got married, I might’ve bought a box or two- I mean it was on sale after all. That’d be it though.

Since then, I’ve learned that stuffing isn’t just something you stuff your roaster with– it has soooooo many more yummy uses.Thank God for that revelation!

Nowadays, I reeeeeaaaaaalllllllyyyyyy stock up when the stuffing goes on sale.

Which is a really good thing, because it’s the secret ingredient to my family’s favorite weeknight meatloaf- Stove Top Stuffing Mix Meatloaf.

It’s not Grandma’s meatloaf, that takes me some time to get together and has a lengthier list of ingredients. So it’s more of a weekend, special occasion recipe.

With this, I can set my beef to thaw in the fridge before work, come home, and in about 10 minutes have this bad boy in the oven.

A genius hack, cooking meatloaf in a bundt pan reduces the amount of cook time a traditional meatloaf requires. It also gives it a beautifully crisp exterior. And who doesn’t love the crispy bits of a meatloaf?!

Perfectly seasoned, tender, every bite is perfection. Serve it with mashed potatoes & gravy on the side, or go for the ultimate presentation by ‘filling’ it with the potatoes, and liberally drizzling it with thick, rich brown gravy.

This is budget-friendly comfort food, like Mama made, but revised for today’s busy schedule.

Stove Top Stuffing Mix Meatloaf

The most tender meatloaf we've ever made or tasted, this one uses boxed stuffing mix as it's secret ingredient. Baked in a bundt pan it makes a gorgeous presentation, especially when the center's loaded with mashed potatoes & the whole thing's drizzled in rich brown gravy.

Ingredients

  • 1 pkg Stove Top Stuffing Mix, any flavor
  • 1 cup hot water
  • 1 1/2 lbs lean ground beef
  • 1 pkg brown gravy mix
  • 1 scant cup cold water
  • 2 large eggs, beaten

US Customary - Metric

Instructions

  • Add the stuffing mix to a medium sized mixing bowl. Stir in the hot water and let the mixture 'rest' for 5 minutes. Stir again, and set aside.

  • To a large mixing bowl, add the ground beef, gravy mix, cold water, and egg. Using your hands, squish and knead all of the ingredients together until evenly combined.

  • Stir in the stuffing mix until evenly combined.

  • Spray a bundt pan with non stick cooking spray. Spoon the meatloaf mixture into the prepared pan. Using your hands, or a spatula, press the meat down into a firm, even layer.

  • Bake the meatloaf at 350 degrees for 45-55 minutes, or until no longer pink inside.

  • Let the meatloaf rest, away from heat, for 5 full minutes. Carefully turn the meatloaf out onto a plate, serving tray, or cutting board.

  • Slice, and serve with mashed potatoes and your favorite brown gravy.

    Thank you so much for this quick and delicious recipe. Instead of adding water to the stuffing, I used whole milk. Just because I always use milk in my meatloaf. Served the meatloaf alongside augratin potatoes and a side of peas. This recipe will definitely be added to our monthly calendar.

    The meatloaf is delicious cooked this way and I greatly appreciate the nutritional information but are those numbers for real?? only 1 carb per serving for 8 total. That is the best part. Thanks for a great recipe!

    I made this recipe …. I used ground turkey so as to keep it on a weekday budget…I made it leaving out the second cup of water…knowing that ground turkey is wet….it was perfect…i put some barbecue sauce on the top to bake it…and wasn’t satisfied with that…next time (and soon) i will use some cranberry sauce on top instead…good recipe!

    I used bbq sauce instead of gravy and a teaspoon of mustard to give it a little zip I did not use cold water since mixture was moist enough . It was delicious my family loved it

    I love this recipe! I’ve made it several times.
    I love to petite dice 8 oz of cheddar cheese and mix it in, then top the whole thing with BBQ sauce for a cheddar-BBQ meatloaf. I used to make a more complicated recipe that required dicing and fresh herbs…this is much quicker, easier, and just as tasty. Thanks!

    Great base recipe for meatloaf. Add whatever ingredients that you family likes. I used garden peppers, chopped fresh onion, and a few garlic cloves, minced. We loved it!!
